Anyone know how to disconnect the safety setting? I never touch this thing when driving, but my gf finds it quite annoying not being able to when we go out.

Asfaik the radio has an input for the speed sensors.
Using a wiring diagram and a little cutting, you might be able to.

Check ebay. Most of the aftermarket units have a bypass module that you can buy. There may be the same for the OEM unit.
